Recipe for Quail or Cornish Game Hen

For all my faithful blog watchers, I may occassionally post a recipe.  On the rare ocassion I do, make sure you write it down as it is some good stuff.  Make it and let me know what you think. 

4 quail
salt and pepper
1/2 can of chicken stock
1 onion (diced)
4 green onions(diced)
2 cloves garlic (diced)
1 red pepper (diced)
1 yellow pepper (diced)
4 teaspoons olive oil
 1 bag of white frozen corn 1 can of Mountain Dew

 Quarter quail, salt and pepper to taste.  In a large,deep frying pan, heat olive oil, add garlic, onion and quail.  Brown on both sides.  Drain ALL excess olive oil.  Add chicken stock and cook for 30 mins or until 70% of the chicken stock is reduced.  Remove from heat, plate on rice and top with yellow and red peppers and green onion.  Serve with white corn.  Crack a Mountain Dew and enjoy.
